Over the last few months I’ve been reading the Game of Thrones books. Well, I’ve been listening to them via Audible e-books. I’ve never gotten such a hankering for ale and beef stew with barley. Obviously barley isn’t an option on the paleo diet, but that doesn’t mean you can’t make a delicious paleo beef stew that’s reminiscent of what all the Stark clan ate on their journeys. The key is simplicity and letting the vegetables bring the flavor.
I’m normally a fan of spices and loads of herbs, but I tried to keep it simple with this paleo beef stew recipe. It’s nice for a change of pace from my usual flavor blast recipes.

Ingredients for Paleo Beef Stew
- 1 Lb Beef (whatever cut you prefer)
- 1 Yellow onion
- 3 Carrots
- 3 Celery stalks
- 1 Fresh bay leaf
- 1 1/2 Cup Jicama, cubed
- 64 Oz Beef stock
- 1 Tomato
- Handful of fresh parsley
- Salt and Pepper
- Unfiltered olive oil
Making the Paleo Beef Stew
Put a pot over the stove and heat it to medium-high heat. While that’s heating cube your beef if it isn’t already in small bits. Add some olive oil to your pot and brown your meat. Season it with salt (about a teaspoon) and pepper.
While the meat is browning, chop the onion, carrots, and celery stalks (I keep the leafy pasts in with the celery). Keep them large for simplicity and so it gives the stew some chunkiness. Add them to the meat and stir together. Keep cooking until the onion is translucent or until the beef starts caramelizing on the bottom of the pot (this gives it more natural flavor).
Dice the tomato and cube the jicama while that’s cooking. Then add them both into the pot with the beef stock and bay leaf. Bring to a boil then reduce heat to low and allow it to simmer. 45 minutes before serving, chop the handful of parsley, then add it to the stew. The longer you cook it the more the flavors will combine and intensify. Also, the liquid will cook down so it’s a thicker paleo beef stew.
