Green Bean Snackers

I’ve never been a huge fan of vegetables. But since I discovered the beauty of oven roasting, I’ve found any way I can to eat them. Green beans are some of my absolute favorite vegetables when you roast them. And these green bean snackers (almost like french fries) always evoke the recipe request when people come over.

Until now, I’ve never really been able to give a recipe, because I prepare them differently every time. But I finally thought through what I do and remembered what ingredients I used when I got the most compliments. And I share that here with you now. Use this recipe wisely.

Use them as an appetizer or as a side dish. You don’t even need a sauce with them.

Ingredients for Green Bean Snackers

  • 8oz Green beans (I use French green beans, or haricot vert, because they cook better with this recipe)
  • 1 Tbsp Olive oil (unfiltered)
  • 1/4 Tsp Salt
  • 1/4 Tsp Garlic powder
  • 1/4 Tsp Paprika (use smoked paprika for a little kick)

Making Green Bean Snackers

Preheat your oven to 350 degrees. (You can cook these at higher temperatures too. I usually match whatever temp I’m using for my other sides/entrees. Adjust the time to cook accordingly.)

Pile your green beans on a cookie sheet either lined with foil or not. Drizzle the olive oil on the green beans then sprinkle the seasonings. Then toss the green beans until they’re evenly coated. Spread them out in a single layer on the sheet then put them in the oven.

Cook them for 30 minutes. I generally don’t time it. I just wait until there’s some good browning on the green beans so they’re crispy.

I love serving these with a delicious cajun roast and gravy along with some sweet potatoes. But they work as a side with almost any type of cuisine. It makes an easy meal if you combine it with chicken sausage.
